flower paste kept in the freezer
some time ago I put some squires kitchen flower paste in the freezer, but when I took some of it out yesterday there were all small lumps in it which were difficult to roll out, is there a way to stop this happening, or how to solve the problem.

Flowerpaste doesn’t really need refrigerating or placing in the freezer. Unfortunately the paste has crystallised from moisture when coming to room temperature. The crystals won’t fully squish down but you can salvage some of the paste by cutting the hard lumps out. I know some folk do place flowerpaste in the freezer. If you’d like to continue doing so, wrap it up really, really well and double bag it in thick freezer bags. Allow the paste to defrost in the fridge gradually before bring it out to room temp. Hopefully this will help reduce the amount of moisture the paste absorbs. I used to place mine in the fridge and found any left over amounts formed mould in a very short time. My advice would be to freeze small amounts and just bring out what you need.
