Fondant figures sagging and cracking
Hi, I am trying to make fondant figures but am having problems with them sagging and cracking, also the paste is quite soft so is disfiguring as i mold/add to the shapes. I am working in quite a cool room. The paste I am using i Renshaws ready to roll paste, i have also tried adding a powder (sorry forgot the name of this) that my local store advised, also tried 50/50 with the paste and Renshaws flower and modelling paste. Hope you can help as i am at a loss as to where I am going wrong.

If you’re experiencing wet or humid weather conditions it will affect the consistency of your paste. Try kneading more tylose powder to the paste and letting it rest for a few hours so the gum is properly activated. Knead it in well to prevent cracks. The paste should feel smooth, firm and keep it’s shape. Support bigger models with pasta or lolly sticks. Please let me know if this helps.

after kneading tylose in fondant we have to leave it for a few hours? and then knead again to make it smooth and shape it?
If you are experiencing hot or humid conditions it is best to let the paste rest to help activate the gum. Kneading it again is just reconditioning it to bring it back to pliable working consistency.
