Hi Elainelow

Unfortunately this is what happens when there is so much humidity. My advice would be to work in an air conditioned room and also store your models in a cool dry place. Models can be dried in the oven with just the oven light on, you could also try placing them under an anglepoise light. Adding more gum tragacanth or tylose powder to the modelling paste may also help. In the Uk we don’t suffer humidity in the same way but when we do I put a little gum trag or tylose/CMC through my fondant to prevent it from being so wet.
I don’t know which type of fondant you are using, some fondants will not tolerate being refrigerated others are formulated for hot humid countries and can be, like this one http://www.carma.ch/en/431
I have read that some people in hot humid countries do refrigerate fondant cakes, however I wouldn’t advice to do that unless you have a low humidity refrigerator. If you google ‘low humidity refrigerator’ there is advice on how to use them. Also if you google ‘fondant melting in monsoon season’ there is lots of advice from cake crafters in similar parts of the world to yourself. I hope some of this helps, good luck with the models and fondant. If you need more information please post again.
