Fondant ruffles over ganache
I’ve covered ganache with fondant many times. However, I was wondering if there would be a problem if I attached 3/4 inch fondant ruffles directly to the ganache? (I’m worried it may not adhere properly!) Or, should I cover the cake with a thin layer of fondant first?

It should be fine to stick the ruffles straight on to the ganache in exactly the same way as you do when covering a ganached cake with sugarpaste. To help the ruffles stick use some cool boiled water to make the ganache tacky so it makes a good contact with the sugarpaste ruffles.

Piping gel can also be used as glue, I would say it can be a lot less messy than water plus it is tackier. Use a small amount with a paint brush at first until you get the feel of it.
Thanks so much. I did a trial and used water. I didn’t realize that the second and subsequent layers of ruffle actually do touch the previous layer of fondant…..dah! My other hiccup was trying to keep the “ruffled” part horizontal rather than have it droop downwards. However, with a bit of tissue and toothpicks anchored in ganache (as opposed to fondant layer) I got that to work!
