Foolproof sponge recipe
Demented!…looking for foolproof Victoria sponge type recipe and quantities for 2 x 8″ sponge tins….been using a Madeira one but waste tons in levelling the cake….is it best to do in one large deep tin and half it? Or do cakes rise less in shallow tins?…….any help appreciated…cheers x
Hi Scarlet, I prefer to make one sponge and then cut it. I’m going to use an 8″ tin so will use the 469g, 8 eggs etc recipe. Was the suggestion to cook for 50-55 mins for an 8″ deep tin cake please? Thank you.
Ps will also be cooking a 6″ to go with it for my daughters birthday. Any idea on a cooking time (and fan oven temp) for that too? Thanks so much!
