Forgot to wet marzipan

Hi – I have just finished covering the top tier of a wedding cake with fondant. It is a fruit cake and has a layer of marzipan underneath.

I forgot to dampen the marzipan before adding the fondant. Is this going to be a problem and will I need to recover it? It’s very hot at the moment (30c inside) so the fondant was quite soft when I put it on top.

The wedding is not until 9 days time, am I OK to store the cake in a plastic cake container uncovered in a dark cupboard?

Hi Benny

Normally if the marzipan is dry it does need wetting slightly for the icing to adhere to it. If the icing does not adhere properly it can cause problems with air bubbles forming underneath. In the case of your cake, it sounds like the icing was quite sticky from the heat so it is posssible that it will have stuck to the marzipan. Leave the cake in a cardboard box, not a plastic one as this will cause it to sweat. Keep an eye on the cake over the next few days to see if any problems develop. If they do, you will probably need to re ice the cake. Please let me know how it holds up. πŸ™‚
