If you make sure you have wrapped the cake air tight in cling film it will be fine, being air tight makes sure no moister that gets into your frezzer when you open and shut it will not frezzer on your cake, that being so it will defrost dry and easyier to handle or shape.
You can defrost in or out of your fridge I have never had a problem. hope this helps.

I always open freeze my cakes for the first twenty minutes and then wrap them up in parchment paper then in foil and finally in clingfilm. It helps to keep them as flat as possible, I place my wrapped cakes on cake boards and then place them in boxes to prevent damage. Defrost the cakes at room temperature still in the wrapping, once defrosted decorate as normal. Freezing cakes does not deteriorate the texture and they will not be wet once defrosted.
