I’ve read that it’s possible to freeze cakes once they have been completely finished with all the sugar paste on ,is that really possible?

As sugar is hygroscopic the rule of thumb is no it can’t be unless you have a low humidity fridge. However please take a look at the answer in the following link and in the link provided in it:
