FREEZING TRUFFLES MADE WITH PREVIOUSLY FROZEN CAKE

Hi Paul,

I’ve just watched your brilliantly entertaining Christmas truffles tutorial.
I have madeira and chocolate cakes in the freezer. If I defrost them and make the truffles, will it then be ok to freeze the truffles and defrost to decorate at a later date, bearing in mind the cakes were already frozen?
I would for myself; what about as presents or to sell?
PS I have a daughter who sounds just like your sister … not just a chocoholic..but – a Galaxy chocoholic… so I guess I may have no truffles left anyway!!

Hi Deane

This is a definite NO. It is very dangerous to refreeze products. Make them and eat them or sell them , but do not refreeze.

I watched the tutorial again and Paul did say not to freeze the truffles if the cake had been previously frozen…………….I obviously wasn’t listening properly!
