Fruit cake for top tier
Hello, I will be making a four tier wedding cake this summer comprising a 12” fruit, 10” Chocolate sponge, 8” Lemon sponge and I was going to use a 6” dummy for the top tier but now wondering if it would be ok to have a 6” fruit cake for the top tier. If I dowel all tiers correctly will the sponges be able to support a top tier 6” fruit cake? Many thanks

Yes, absolutely it will be fine. I’ve done it on several occasions without problem, just use Paul’s method for dowelling and a cake board not a thin card to place the cake on.

I presume the cake board gives it better support .Would you use a board for each tier and do you just ice down over it ?
I use cake boards (not drums) for all the tiers. which are being stacked. They are thin boards which don’t flex when carrying weight. Not to be confused with the thin cards which are very flimsy. The boards are the same size as the cake so they don’t need icing ( hope I’ve understood this part of your question).
