Fruit Cake Stacking

I have a wedding cake coming up and 1 of the tiers is a fruit cake and potentially they are going to want that as the top tier. I wanted to ask if people think this would be ok? I always use ganache on my other cakes so they do create a firm base and obviously would use a lot of dowels to protect the cakes underneath. Has anyone had any experience of this?

Hi maitlka

I’ve never had any problems with a top tier fruit cake. As long as you follow Paul’s dowelling methods you won’t have any problems either. Here’s another answer to reassure you:

Fruit cake as top teir

….. and just as a memory refresher, Paul’d stacking and dowelling tutorials are here:

Good luck! Happy decorating 🙂
