I’ve had no problems using chocolate ganache drips or decorations on a fondant-covered cake. I use a 1:1 ratio of cream to chocolate for a fluid consistency, and add the colour to the cream rather than to the ganache. This just helps for an even distribution of colour. Experiment to see what works best for you. 🙂
EDIT:
You could of course use ready coloured chocolate drips available at most cake decorating supply stores and some supermarkets.
