Ganache filling
When filling a cake with ganache is it a different mix to what you cover the cake with. The ganache on the out side sets hard, would it not do the same in the middle. Thanks Janet

Ganache can be made in all sorts of different ways. The type which we use for the tutorials is the most basic type. It serves well as crumb coat as well as filling. Have a peek here for some answers http://www.cakeflix.com/questions/ganache-filling-that-actually-stays-soft
If you’d like to make a separate ganache for fillings only, add some butter to the chocolate when the hot cream has melted it, gently combine until glossy. Cover the surface of the ganache up with cling film so it doesn’t crust over and leave to firm up at room temperature. This type of ganache is not really suitable to use under sugarpaste but make a lovely soft fudgy filling.
