Ganache or butter cream???

I am going to do the beetle car cake and I am confused.. Here it is very hot 40 degrees!!! Shall I cover it I. Ganache or buttercream for best results in this hot weather? Thanks

I’m not an expert but I’d say ganache over buttercream .

Just to be clear I mean I’d use ganache and not buttercream x

Hi Rexy

To make a more stable ganache in very hot weather use more chocolate to cream, it will set harder and stand up better to the heat. The ganached cakes should still be stored in a cool environment like an air conditioned room or somewhere completely away from direct heat of the sun. Running a fan will also help. If you want to use buttercream you will need to use high ratio shortening which will withstand heat. Here’s an answer I gave to a similar question:

Shall I use 4:1 ratio cause I think I will do the ganache as it will stay still and leave it in the fridge before applying sugar paste ..

Yes. do 4:1 and then let the cake sit in the fridge until the ganache is set really well before decorating. If you get any sweating/dew drops on the fondant don’t touch it because it will make finger prints and shiny patches. Just leave it alone and it will dry off no problems.

Just thought! use 4:1 if you’re using white or milk chocolate and 3:1 if you’re using dark.
