Ganache quantities

Could you please help – I am making the handbag cake with the dog – the recipe calls for 1 kg of ganache I believe.

Cod you please give me the recipe for this please – amount of chocolate to cream – I am using milk chocolate. Also is it doyble cream or sine cream that shod be used?

For the tutorial cakes we use double cream to make ganache.

Thank you so much! Could you tell me the best chocolate to make it with please – I’m a bit limited as only have my village shop available to me!

You can use any chocolate you want but for best results look at the cocoa content. For milk chocolate try for between 39-42% cocoa solids. If you’re limited for choice something like dairy milk or galaxy will do just as well. If you find it doesn’t set add a bit more melted chocolate to the ganache. Make the ganache up the night before you need it, place cling film over the surface, expel as much air out as you can and leave it to rest. You can leave at room temp or in the fridge.

Thank you for all your help – ami able to mix milk and dark together? I have about 400 grams of milk and the same of dark? I would like to start tomorrow so need to make ganache tonight and that’s what I have – would it work or be a disaster?!

You can mix the two, it will be fine I’ve done it loads of time.
