Ganache or butter cream ?

What gives the best results…ganache or butter cream..
For icing cup cakes.

Hi Susan

My preference, ganache every time! sets firm and gives a really sharp finish. For icing cupcakes, whisk it up until light and fluffy then ice or pipe swirls or flowers.

I have made ganache, but didn’t realise I could whisk it.

You can also add your favourite flavourings or liqueur it, enjoy!

Please don’t make the mistake of using whisked ganache for crumb coating cakes. Once ganache is whisked it is not as sturdy as unwhisked. It will still set up but will remain much softer. Susan, have a look at the Hummingbird bakeries cupcake recipes, really yummie, but there are literally thousands to choose from. x

The hummingbird chocolate cup cakes are in the oven.
Will let you know how they turn out.

Madeitwithlove, the cup cakes turned out perfectly very light.
I haven’t tried one, but I am sure they will be delicious.
I found the recipe on Belinda’s Bites, thankfully not with cup measures.
