ganache recipe quantities

Hi, I have Pauls Decorating Christmas cakes book and he says in the recipe for ganache use 2 pints of cream to 1lb of chocolate (page 13) however, on the sugarcraft school video he says 1 pint of cream to 2lbs of chocolate! I have made it according to the book – it’s still warm but seems runny! Does anyone know which is the correct way and if you can add extra chocolate after if necessary? Thanks x

Hello mrsymo

The book has a print error, the correct amount to use is as heard on the video
or use my ganache chart here:

How to Ganache Cakes Without Gnashing Your Teeth!

There will be new ganache charts today for taller cakes.

Thank you, I have melted some more chocolate in the microwave and added it to the ganache – it seems thicker now fingers crossed 🙂 x
