Ganache showing through

Hello I’m making the chocolate wrap cake but in white coco form. After reading how temperamental the white chocolate is I was thinking of using the dark but I’m worried it will show through. The cake itself is chocolate with buttercream, will a dark ganache show through the white coco form?

Hello Lu

No it shouldn’t do, the ganache will set hard, all you’ll be doing is adhering the cocoa form to the surface. What you may be able to see is dark ganache when looking down into the cake from above. However if you intend filling in all the cavitites with fruit and flowers, that too won’t be visible.
If you’re very concerned, ganache the cake in the dark chocolate, let it set completely. Keep the cake very cool and then give it a coat of white ganache. The white ganache will set quickly on a cold cake. If you are in a very warm climate use 4:1 ratio white chocolate to cream. Proceed as normal.
