ganache storage

Trying to find out the correct storage time frame for storing it in the fridge-some say a week, some 2 weeks, and Paul says couple of months.Thoroughly confused.I always use 35% fat sterilised cream.

I have kept dark ganache on my kitchen counter for two weeks as an experiment. There was no molding and it tasted fine. However this was in the winter. There is a comment here http://www.cakeflix.com/blog/how-to-make-chocolate-ganache which may interest you, scroll right down until you see the answer from member Hilary. I think Paul means it will store in the freezer for a couple of months which is correct. If you add alcohol to ganache it will also lengthen it’s shelf life. It will keep in the fridge for approximately two weeks or at least by the sell by date of the cream. Sterilised cream may have longer sell by date, have a look on the tub. You’ll know if it’s gone off because the cream will smell.

I have kept ganache in the fridge for at least a couple of months. Many chocolates and truffles are made using ganache and their shelf life is quite long. The chocolate added to the cream completely alters the cream shelf life but best to refrigerate to be on the safe side and tasting it to make sure it is ok is always a good thing :))
