Glaze works best on a very cold or frozen cake as this helps set the gelatine more quickly. If the cake is at room temperature, the glaze has a tendency to slide off. Take a peek at the mirror glaze tutorial by Helen Vasse ehich will talk you through the correct way to apply glaze.

Thanks very much I found the link very useful however could you tell me how long it takes for the glaze to set and how long the shine will last for ?

From my own experience, the glaze should set more or less straight away. It remains tacky so avoid touching it as finger marks can not be repaired. The shine can last for a few days, however with constant refrigeration it will dull.
