Hi colletteb
Paul used a fruit cake only because the person he was making the cake for lives overseas and the birthday wasn’t for a couple of weeks in which time a sponge would have gone off. There is no reason why you can’t carve this cake out of a sponge. Just crumb coated it well with butter cream or preferable with ganache. I would make sausage shapes with a little fondant and create round circles for the eyes, these will make the hollows which will be filled once you’ve iced the cake. You can follow the tutorial then to completion. I think Paul’s tutorials are very adaptable, they don’t necessarily have to be created exactly as seen. Hope this helps.
