Handbag Cake Portion Size
For the handbag cake, Paul uses a 10″ cake that is then carved. Any suggestions how many portions this will provide? I need to make a similar shaped cake for 50 people – any thoughts what size sponge I should start off with?

Click on the chart to enlarge it. You will notice that a 10″ square cakes give 50 x 2″ x 1″. Obviously you will lose some portions due to carving. I think a 12″ square may yield the amount you would like. Personally I would go ahead and make according to the tutorial for the show cake and bake off a small cutting cake for extra portions. You don’t have to decorate a flat cutting cake, just ice it. Once sliced up out of sight of guests no one will be any the wiser. Hope this helps.
