Help regarding dairy free cake please!!!!! URGENT!!

Hi there, I’ve been asked to make a dairy free cake for a lady who is turning 21, she then said it is not exactly dairy free she can have eggs but she CANT have anything with milk products in like butter, margarine, lactose, whey etc..I have never done anything like this before and are scared as I need to get it right, does anyone have any recipes or any advice?? can I substitute ingredient for a recipe I already have??

Need help soon as please as they need an answer over weekend!

I have just had a quick look at the recipes, some are in cup measures. If you need a conversion table for American recipes look here:

I would recommend that you practice a couple of the recipes out first before committing yourself to the order, it’s always best to be prepared to avoid disappointment. I’ve made dairy free cakes by substituting non dairy spreads for butter and soy or almond milk for milk and cream.
If you type in the above search box ‘dairyfree’ there is quite a lot information on the site for dietry needs recipes.

Hello

I’ve just baked Paul’s Moist Chocolate Cake dairy free by substituting the following

butter with ‘Pure’
chocolate with Kinnerton Dairy Free Dark Chocolate (bought from Sainsburys)
buttermilk – I made a buttermilk substitute with Alpro soya milk and lemon juice (LMK if you don’t know how to make this – v simple)

The cake turned out beautifully as usual!

Then I used a dairy free ganache with the same Kinnerton chocolate (I could only find dark chocolate but there may be other options) and Alpro single cream substitute. I made ganache to 1:2 ratio choc:cream and it set hard quite quickly which was great for the outside of the cake. The ganache was really nice but to make it softer to fill inside the cake I mixed it with some Pure spread.

all turned out perfectly, was my first attempt at dairy free chocolate cake so I wanted to share this 🙂
