hexagon wedding cake

I have been asked to do a 3 tier hexagon wedding cake for 130 people, could anyone tell me what size cakes to make, and do I have to put the fruit cake on the bottom tier, the other tiers are choc and plain thanks xx

Hello joanne

If your customer has asked for the largest tier to be fruit cake then yes that has to be the bottom tier. If you are doing a very small fruit cake it can be the top tier proving the cake below is dense enough to take the weight. All the tiers should be dowelled as usual before stacking. I would do 7inch 9 inch 12 inch and make the smallest cake fruit cake.its not the most popular and cn be cut into 1 inch pieces or saved for another celebration
