how far in advance can i marzipan and sugar paste a cake

hi i am making my sons wedding cake i have made the fruit cakes which have been fed for couple of months, the wedding is 14 june but i will be going there the week before, could i marzipan the cakes this weekend, my son is home and thought if i could do them then i can send them back with him as i dont have room in my car for them. once marzipaned how do i store them

can i do the sugarpaste now as well, it would be great if i could do this is advance too as i have sponge cakes to make and ice the week before the wedding. if i can do sugarpaste now how do i store the cake once done

Personally I think almost 7 weeks is too early, although the cakes will just continue maturing under cover. Other members may find it isn’t too early. I usually marzipan and ice my Christmas cake three weeks in advance and cut in the New Year. The cake is always fine. The wedding cakes would probably be fine, however sometimes icing can become discoloured/hard and brittle. Decorated cakes should be kept in a cool room in card board cake boxes away from strong odours.
