How to Freeze a ganache cake

Hi I’ve got quite a lot of cakes and wedding cake to do this summer,I just wanted to know how to store ganached cakes in the freezer

I was sure your question had been answered by member goldengoose and myself but the answers are not displaying.

First place the ganached cake in a cake box and place in the fridge until the chocolate hardens.
Remove from box and wrap in several layers of clingfilm/saran wrap and then heavy duty freezer bags or several plastic bags. Place cake in the box and into the freezer well away from smelly foods. Teh layers of wrapping protect the cake from freezer burn and the box from any damage if it gets knocked. To defrost, depending on the size of the cake, remove from freezer 24 hours prior to requirements. Remove all the wrapping expect for one layer of clingfilm. Place in the box and defrost at room temperature in moderate climate or in refrigerator in hot climate. The larger the cake the sooner it should be removed from the freezer. The one remaining layer of cling film will protect the cake from airborn bacteria and dust. There is a lot more information of the site about freezing and defrosting ganached cakes.
