Ice Cream Cake
HI
Does anyone know how to make an ice cream cake please? I have looked on line and apart from the obvious, sandwiching a cake with ice cream I can fine no other information. I used to buy ice cream cakes years ago from a fantastic ice cream shop in Scotland. The cakes were made of very fine sponge and both filled and completely covered with the ice cream, as you would cover a cake with sugar paste. If anybody has any ideas that would be great.

We haven´t made one, but would love to hear back if you are able to find out any more information, but if anyone else on the page can help we´d be delighted to hear.

I think you would need to be looking at gelato type icecream in order for it to remain stable. Google gelato or geletine based icecream to see recipes. Hope this is going in the right direction x

Had another thought ……… could the icecream cake be made from condensed milk and stablised whipped cream?
These ingredients wouldn’t need to be churned and the stablised whipped cream would certainly crumbcoat and cover the cake smoothly.

Yes I think that would likely make a good medium for crumb coating. I can give that a go. I won’t be testing the ice cream cake for a while but once I do I will certainly let you know how it goes.
