Keeping cut cake edges moist

Hello I am making a number 80 cake and want to cut the numbers from a 14 inch cake .How do I stop The it edges around the edges of the numbers from drying out please ?

Is it a naked cake? If it is, the edges can be moistened with simple syrup with a pastry brush every now and then through out the day. Another way would be to spray the syrup. It only needs a small amount as sugar will naturally draw moisture from the air. Please let me know whether I’ve understood you correctly. šŸ™‚ x

Hi Iā€™m making one of the on trend biscuit cakes with the fruit meringues etc on top . Am going to use sponge instead of the biscuit .I am hoping to make a 14ā€ sq cake and cut out 6 inch circles to form the numbers 8 & 0This will mean that the edges of the numbers will be cut cake and exposed as I only intend to fill the sponges and decorate the top .Would brushing with sugar syrup be enough to stop them from drying out

If the cake is kept out for a long period, keep it moistened by spraying the syrup. Intially soak the edges with warm syrup but don’t drown the sponge. It will remain moist for a few days because the syrup will keep drawing moisture from the air. Sugar is hygroscopic, it attracts moisture.
