Lemon Curd
HI
I have hear that some people add lemon curd to their cake mixture (obviously not chocolate cake batter) and that it helps to keep it really moist. Does anyone do this and if so what quantities would be used please?

Yes you can use lemon curd. I use two tablespoons in an 8″ cake mixture (maderia cake) and increase it slightly for bigger mixes. Don’t put too much in as it will make the cake very sticky and clawey. Try it on a trial cake first as an experiment. xx
