Good Evening,

I need to make light fresh cream – but I am not sure what Cream I would need to use – Single Cream , Whipped Cream? Also I really would appreciate it if you could suggest a recipe for this, please.

Do you mean a chantilly cream? If it is, that is made with whipping cream, whipped to soft peaks and sweetened with sieved icing sugar and vanilla extract or flavouring of your choice. Take a peek here for a recipe:
