I agree with madeitwithlove – this is an excellent sponge cake, cuts well and is very tasty and moist. I tend to use this one for my sponge cakes now, and use the cake size blog to upsize or downsize the ingredients as required. Give it a try, I’m sure you will be pleased. Oh, and the fruit cake is good too!

I baked one today as well firechick for my neighbour’s 70dum birthday. Drenched with limoncella, filled with lemon curd and white choco ganache. Woooooo the smell it is mmmmmmmm! Too bad it’s not for me.
