Macarons, colouring

I’ve been asked to make Macarons as part of a wedding package, I’ve managed to get the Macarons done but can’t seem to get them deep purple, I have tried powdered and gel paste colouring but a bit wary of putting too much in, in case it affects the flavour, any help would be appreciated

Hi winnie

The best way to colour macarons is with powdered colours. To achieve a deep purple you would need to make the batter one shade darker than you want the final colour to be. I find ProGel concentrated colours are much better than regular gels. With both types you will need to experiment for taste. Both can leave a taint but really it is the only way to know for definite how much you can add before the taste changes.

Thank you for your advice, I will try the gel, I agree it is really trial and error so I’ll have to keep trying, the experiments always end up with my husbands work colleagues!
