Madeira Cake – SOS

Hi, I have baked a lovely Madeira cake which tastes really nice but when I level them off there are darker bits inside. I’m really not sure what they are or why they appeared. Does anyone have any idea? Also is it still ok to eat the cake with these darker spots inside? It kind of looks like little uncooked pieces of sponge but I have no idea how that would happen. Thanks

Hi maitka

It’s possible some of the flour wasn’t folded in completly. There was a similar question not so long ago, here it is:

Small hard lumps?!?!?!


If your dark bits sound the same it will be little uncooked lumps of flour. While it won’t do you any harm if eaten I’m sure it must look a little odd and you may want to bake another.
