Making soft royal icing

I want to pipe some royal icing decoration around the top edge of a cake covered in sugar paste. will the icing spoil the cake, as will be too hard when it is eaten? I then want to paint the decorations in gold.

Hi Tomandhen123

The icing will not spoil the cake and once dry you’ll be able to paint it with the gold. Most people don’t even eat the icing, don’t worry about how hard it becomes. If you prefer to use a softer Royal icing, add 1 teaspoon of glycerine to 450g of icing. For a smaller amount of icing, half a teaspoon to 225g of Royal icing. this will give a softer bite but it may not be suitable for painting. Try a little as an experiment before doing the real thing. 🙂
