marzipan and fondent a fruit cake.

Hi There.Need a little help please. I made a 4 tier fruit wedding cake 2 weeks ago and I was just wondering when I should start putting on the almond paste and fondent. The wedding is the 22nd june. Also how long before the wedding can I stack, decorate and store it. Made Pauls Lily’s and they turned out fab. Thanks Paul. Ur a legend. Look forward to next tutorial. (: …………….Thanks a Million.

Hi mincho

I would wait until a couple of weeks before the wedding depending on how much decoration there will be. Best thing to do now is feed the cakes if you’re using alcohol. Wrap them up in parchment paper, cling film and foil and store in an air tight container to mature. There’s a little more information here too http://www.cakeflix.com/questions/decorating-xmas-cake. I know this mentions Christmas cake. I should also have said that once you put the maarzipan on leave it for 24 hours to dry out before icing. If you’re stacking the cakes it is best to dowel while the icing is fresh because once dry the dowels could cause the icing to crack. The cakes will be ready for stacking when you need to decorate.

You’re welcome mincho, feed the cakes only 1 or 2 tablespoon at a time depending on the size of cake. Don’t make them wet too close to decorating time. Stop feeding 2 weeks before hand. Enjoy your nightcap!
