Yes, this is quite acceptable and perhaps give it a vanilla or orange flavour However, if you want something a little lighter try white chocolate buttercream with raspberry jam. There are many recipes online for white chocolate buttercream to try. 🙂

Thank you.. I’ll have a look at the other recipes .
I’m going to cover the cake with sugar paste so I thought ganache would be best to use .

Hi Kath

I should have mentioned that some people prefer to crumbcoat madeira cakes with white ganache. Either way, if you’re coating with milk chocolate, use the same ratio quantities as for white chocolate for the ganache. For coating it’s 3 parts choc to 1 part cream and for filling 2 part choc and 1 part cream. Using a high ratio for coating helps it set better. Ganache calculator is here if you need it:
