Mini chocolate wraps
I am making my daughter’s wedding cake and she wants some mini chocolate wrap cakes for the dessert table for the evening reception so I wondered how long the mini cakes would last or if I could freeze them once made before putting the fruit on for the evening. Thank you for your help

If you are using Paul’s moist chocolate cake recipe freezing the sponge all ready ganached will be fine. The cake will have a five day shelf life if you freeze on day of baking. However I was advised by Squire’s Kitchen that modelling chocolate should not be frozen, in which case you will have to defrost the mini cakes a couple of days ahead of the wedding to wrap them.
