2 Cup White Chocolates,
1 Cup Cream
1 Cup Nutral Gel (Glaze Gel)

Is Nutral Gel same as using Piping Gel?

Neutral gel is nappage, a clear glaze used for giving a shine to fresh fruit on tarts. Recipes usually include gelatine or a veggy substitute like Agar. I’ve found a vegan recipe which you may find useful:

Hi,

1)For Helen Vass – Crème de la Crème could I use Dr. Oetker Vege-Gel Sachets instead of 14g Silver leaf gelatine?
2)If so this is powdered bases, would this make a difference compared to using Leaf gelatine?
3)How would I use this with Helen’s recipe she add the Leaf Gelatine to the cocoa and cream where as this is suggests:
To dissolve the Vege-Gel pour at least 200ml of cold water into a jug or small bowl.
Sprinkle the Vege-Gel onto the cold liquid and stir until completely dissolved.
Heat the mixture to boiling point, use in accordance with your recipe.
4)This sachet contains lemons would this alter the taste?

The one and only time that I used Vege gel was a complete disaster and that was just for setting a blancmange! I don’t think it would be particularly compatible used as a substitute for gelatine in the Helen Vass mirror glaze recipe. However, you could experiment with it to see whether it is fit for purpose. I can’t remember Vege gel having a lemon taste but if you do make an experiment, this is something which would be revealed.

The video recipe which you posted uses nappage, I don’t know how well that would set as ordinarily, when used to glaze fruit, it remains tacky. I feel, for a vegetarian substitute, Agar would be the best solution. There are lots of recipes online, here is just one:
