Flower paste is a strong paste which can been rolled out very thin to make realistic flowers and larger models which need to dry hard. Sugarpaste is for enrobing cakes to give them a professional smooth finish. A combination of the two makes gumpaste and can be used for making models and flowers, fabric looking drapes and other smaller decorations. There are different terms used to describe these mediums. Sugar paste is also known as roll out icing and fondant, not to be confused for pouring fondant which is a runny icing used for decorating cake fancies. Flower paste is also known as petal paste and gum paste.
