Decorations can be made up well in advance. Modelling chocolate usually has a long use by date, if used within that date it will be fine. Once made store them in a well ventilated cardboard box layered with tissue paper. This helps to protect the decorations from damage and from sticking to one another. Keep the box in a cool room away from sources of any direct heat like radiators or fluctuating temperature. It’s not advisable to store them in the fridge or freezer as this can cause the fats in the chocolate to separate and leave white deposits on the surface.
