There is a vanilla sponge cake recipe by guest tutor Mrs Jones which you will find here:
Mrs Jones adds an extra 10% flour to her recipe if the cake is to be used for a tier or if for carving. I have copied her comments for you as follows:

‘This cake is perfect for covering with sugarpaste (rolled fondant). When the cake has been baked allow it to cool down and go cold, wrap in cling film (plastic wrap) and place in the fridge for up to 24 hours before ready to use. Always work with a cold cake because it is easier to carve. Talking of which, if I am carving this cake it is, or going to be a large tiered cake, I add up to 10% extra flour to the recipe when baking. ………

On the whole sponge cakes remain fresh for a period of between 3 – 5 days if kept in a cool environment and stored in an airtight cake tin. Mrs Jones does not recommend freezing this cake. Please read her advice as follows:
‘Although you can freeze this sponge for up to 3 months, I would never serve a sponge cake to clients that has previously been frozen. I ALWAYS bake a fresh cake. Nothing tastes better! Mrs Jones’.
