mr jones carrot cake

im going to make a horses head from carrot cake,im going to use white chocolate ganache and cover with sugar paste, i was just wondering how long this cake lasts ,please

Hi smitty19

Mrs Jones doesn’t indicate how long this cake will keep. I bake other carrot cake recipes quite often and find squeezing the excess moisture from the carrots prior to baking helps with the cake’s keeping properties. My carrot cakes usually lasts approx four days if kept refrigerated providing we can resist the temptation.
To squeeze the moisture out, wrap the grated carrots up in a large tea towel and wring as tightly as possible. This may have to be done a couple of times. A salad spinner makes the job much easier!
If cream cheese is used it is advisable to keep the cake refrigerated. There is a little information about cream cheese here:
