Mrs Jones cake – crust!

I have just made Mrs Jones 10″ cake – it looks and smells lovely however when I removed the grease proof paper from the tin lining (very carefully) the sides of the cake at the top seemed to come away from the cake like a crust. Once the cake was removed from the tin the whole of the top layer could almost be peeled off in one go. I decided to remove it in the end.
Any ideas why this has happened? It hasn’t spoilt the cake and the soft crust topping is delicious! ;)….. Every cloud as they say!

Hi Caz

Sometimes this happens if the baking tin has been over greased or if the oven temp is slightly too high.
Mrs Jones’ recipe is very light so double lining the tin will help protect the cake as will having the lining paper well above the rim of the tin. These small measures will help your cake from crusting in the most vulnerable places. Try it when you bake again, I hope it works for you.
