Roasting the nuts adds a richer, deeper, more distincttive flavour into the cake. I would liken it to roasting a coffee bean to draw out it’s flavour. It’s really worth while taking that extra step, however if you don’t want to roast I guess it’s ok but the taste won’t be quite the same.

Thank you so much! I baked the cake last night. Next round, I will roast the nuts.

Just one more question.
My carrot cake is very crumbly. It breaks into small crumbs when I cut it.
How do I solve this problem?
Please bear with me. I am an over enthusiastic beginner.

The cake tastes great on its own without the frosting. I am saving one layer to be eaten as it is.
The other one I will frost with cream cheese, just for variation.
