can you bake Mrs Jones carrot cake in one tin instead of two as shown?

The mixture would be too much for one 8″ tin. The whole mixture will probably make one 10″ square cake or one 11″ round. I don’t know how tall it would be. If you want to make one 8″ deep cake you’d need to divide the ingredients in half and add approximate 20% more to make it a decent depth. I haven’t made the cake yet so haven’t got around to experimenting with the mixture and can’t say how deep each layer comes out. There is additional comment under the video about the height of the cake. Perhaps other members will be able to give a more definite answer.
