Mrs Jones Sponge……Different Flavours?

I have recently baked and decorated 2 of Mrs Jones vanilla sponge cakes, sandwiched them together with Paul’s buttercream recipe and strawberry jam, I then covered it in white sugar paste and decorated it with lovely black/white/grey flowers…looks and tastes amazing 🙂 I have to say that it has been a resounding success in every way, I would however like to know if I can adapt the recipe for different flavours i.e. chocolate/lemon/orange/coconut etc etc???

http://www.cakeflix.com/questions/two-questions It’s better to mix the cocoa powder with a little boiling water to make a paste, cool before adding to the cake mixture so the cocoa is distributed evenly.
I normally add the zest of a whole lemon, orange or lime and the juice of the fruit to make different flavours. I use enough juice to loosen the cake mixture and no more. Adding too much will change the texture of the cake.
For coconut the same amount can be substituted as with the cocoa powder. Toasting the coconut intensifies the flavour. There are of course other ways to flavouring cake. You can use flavoured extracts and flavoured sugars as in this blog
