Mrs Jones’ Toffee Cake – bicarbonate of soda?

In the video for the toffee cake I didn’t notice the bicarbonate of soda being mentioned (sorry if I’m mistaken!) but the written recipe says to do so. I’ve made the recipe and it sank in the middle slightly so I’m wondering if the bicarb is correct or whether I just need to reduce it a little?

In the written recipe the information given is to add the soda to the boiled, cooled dates and set aside. Soda is added to dates to help make them the gloopy consistency which is seen in the tutorial. I think because Mrs Jones had already prepared the dates before filming she just didn’t think to mention it on the video. Rest assured she will have added it. As for the cake sinking slightly, you could adjust the soda in future. However, I think the sinking is most probably due to the cake being very moist from the date mixture and could have benefitted from a few more minutes baking.
