Mrs Jones Toffee Cake Ingrediants say bicarb but???

Hi im wanting to make Mrs Jones’s toffee cake but wanted to check something 1st. In the ingredients list bicarb of soda is mentioned, but it is not mentioned in the method or the video so im stuck wondering do I add it or not??? any suggestions thanks xx

Yes you do need the baking soda. When a recipe contains an acidic ingredient baking soda is used as a leavening. Soft brown sugar in this recipe is the acidic ingredient, when it comes into contact with baking soda, carbon dioxide bubbles are released during the baking process assisting the rise in the bake. Add it in with the flour.

It’s the molasses in the brown sugar which is acidic. White sugar doesn’t have it because it has been refined.
