Just watched the video of mrs jones. Is this sponge suitable for stacking?

Sponge cakes are used all the time for weddings and other celebrations and are stacked, so I think this cake will be fine for that purpose. It wouldn’t be a good idea to stack a heavy fruit cake on it but other similar cakes are fine. Do you intend to layer the cakes? If you do, once filled you’ll have a very tall cake. The filling will also give addition strength, but you will still have to dowel if you’re going to stack.
