Mum’s 60th Birthday Cake- chocolate or carrot cake?

Hello everyone,

I am just starting out on my baking and sugar craft journey and have taken on the task of baking and decorating a cake for my mum’s 60th birthday. I had planned to make Paul’s Chocolate Cake and decorate with buttercream fondariffic in white and teal. It will be a two tier cake similar to the Box Explosion Cake (see free courses for beginners). I have chosen to make a chocolate cake as the recipe and instructions are very clear on this site. Nonetheless, I know that my mum would prefer a carrot cake. I have no idea if you can use fondant to cover a carrot cake…or even have a good carrot cake recipe for that mattter. D you think the box explosion cake could be made with carrot cake? If anyone has any ideas or tips, I would certainly appreciate them.

Hi Kirsywright2000

Why don’t you use the chocolate recipe for the bottom tier as it is a solid cake and will take the weight of the top tier. If you are new to baking why don’t you use Betty Crocker’s carrot cake mix for the top tier as it is very easy and very good fill with cream cheese filling which can also be bought ready made (maybe cheating a little but achieves excellent results :))

Thank you for your answer. I think I will stick with the chocolate for both tiers. In your message you mentioned that the bottom tier is a solid cake, I had intended on making two making two 23cm rounds, placing one above the other with ganache and berry jam in the middle. Would you recommend sticking with a sold cake on the bottom and no filling?

Kirsty you can make a carrot cake and cover in fondant. obviously you would fill and cover your cake with buttercream first then put the fondant on.
If you decide on stacking your cakes, just a reminder that you do need to dowel the bottom cake so that it supports the top!

Hi Kirsty

I meant that the chocolate cake is a dense cake (sorry solid was misunderstood) so it can support the weight of the another cake on top of it although you will still need to use dowels
